1. In a large mixing bowl, combine 3 cups of flour, instant yeast, and salt.
2. In another bowl, whisk together the pumpkin purée, ½ cup Greek yogurt, warm milk or water, melted butter, and date sugar.
3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
4. Knead the dough for about 10 minutes. If the dough is sticky, add more flour as needed.
5. Place the dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
6. Roll out the dough on a floured surface into a large rectangle.
7. Spread the softened butter over the dough, then sprinkle with brown sugar, cinnamon, and 1 tsp of pumpkin spice seasoning.
8. Roll up the dough tightly and cut into rolls.
9. Place the rolls in a greased baking dish, cover, and let rise again for about 30 minutes.
10. Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes or until golden brown.
11. While the rolls are baking, make the icing by mixing the softened cream cheese, 1/3 cup Greek yogurt, maple syrup, vanilla extract, and 1 tsp pumpkin spice seasoning until smooth.
12. Spread the icing on the warm rolls before serving.
