Easy sofrito steak bowls with marinated steak, veggies, and yellow spanish rice. This recipe includes a delicious sofrito sauce made with olive oil, onions, bell pepper, garlic, tomatoes, and spices.
1: Marinate steak in sofrito sauce for about 5-10 minutes.
2: Cook marinated steak over medium heat for about 10 minutes, then remove from the pan.
3: Add sliced bell peppers and diced green onion to the same pan and cook.
4: Assemble bowls with lettuce, rice, cooked steak, veggies, tomatoes, black beans, greek yogurt, and fresh lemon juice.
5: For sofrito sauce, heat olive oil and sauté diced yellow onion for about 7 minutes.
6: Add diced green bell pepper, minced garlic, diced tomatoes, paprika, oregano, and cumin, stir, and cook for another 10-15 minutes.
7: For yellow spanish rice, sauté scallions, cilantro, and minced garlic for about 2 minutes.
8: Add diced tomato until tender, then add rice, chicken broth, and seasoning.
9: Let broth boil on high heat, stirring occasionally. Once the broth barely skims the top of the rice, reduce heat to very low and cover for 15 minutes.
10: After 15 minutes, turn off the heat and let it sit for at least 5 more minutes before serving.
