A hearty lentil soup made by softening onions and garlic in olive oil, then adding spices, tomato sauce, and broth. Lentils are cooked until soft and combined with coconut milk, seasoning, and topped with yogurt and cilantro.
Soften 1 diced onion and 1 tablespoon minced garlic in 1 tablespoon olive oil over medium heat.
Add 0.5 teaspoon diced red chili peppers, 0.5 teaspoon cumin, 0.5 teaspoon turmeric, 0.5 teaspoon curry, and 0.5 teaspoon coriander seeds.
Stir in 0.25 cup red tomato sauce and 1.5 cups broth of choice.
Once the mixture begins to boil, add in 2 cups of lentils and cover.
Cook for about 10-12 minutes until the lentils are soft and break down.
Add in 1 cup coconut milk, salt, and black pepper to taste, starting with 0.5 teaspoon each.
Squeeze the juice from half a lemon into the soup.
Top with greek yogurt, more red chilis, cilantro, and a drizzle of olive oil.
 Enjoy with pita or lavash.
